[January 17th, 2007] Portland chefs are redefining the restaurant yet again. With the help of local artisan food purveyors, Jake Nelson (currently with Genoa ) and other "Rogue Chefs" will offer dinners at revolving undisclosed locations throughout industrial Portland beginning Saturday, Jan. 21. The concept is similar to "Culinary Speakeasy" or "Guerrilla Gourmet" events in New York, aiming to create a chef-designed experience that's entirely focused on food. "Foie Gras: A Nine Course Meal Celebrating Fat " is booked solid, according to theroguechefs.com , but spaces are available for a Jan. 28 event. Nelson, a Minnesota native, recently moved to town from Napa. "There's a lot of buzz about Portland in Napa," Nelson says, noting that a lot of chefs in California's celebrated wine region are plotting their own invasions of the Rose City.
