[January 31st, 2007] Executive Chef Scott Shampine of the Mediterranean-inspired eatery Olea will exit his Pearl District post late this winter, hopping across I-405 to take the kitchen reins at Gracie's in the Hotel deLuxe. Without being specific, Gracie's management said to expect Shampine, who's worked at such venerable establishments as Napa's French Laundry, San Francisco's Aqua and Hurley's in PDX, to execute "quite a departure " from the restaurant's current European-style Northwest cuisine.
