[January 31st, 2007] Executive Chef Scott Shampine of the Mediterranean-inspired eatery Olea will exit his Pearl District post late this winter, hopping across I-405 to take the kitchen reins at Gracie's in the Hotel deLuxe. Without being specific, Gracie's management said to expect Shampine, who's worked at such venerable establishments as Napa's French Laundry, San Francisco's Aqua and Hurley's in PDX, to execute "quite a departure " from the restaurant's current European-style Northwest cuisine. Did we mention he cures his own salami ? >> Don't feel sorry for the Pearl District; it's losing Shampine, but hell, it's gaining a Deschutes Brewery pub . The Bend-based company, known for its killer Mirror Pond Pale Ale and Black Butte Porter, recently announced it'll open its second Oregon pub across the street from Portland Armory (at 210 NW 11th Ave.) in October 2007.
