The ever-growing empire known as Pho Van is one of the best portals for first discovering the crisp, refreshing sweet-sour-spicy-salty panoply of Vietnamese cuisine. The place is known for its luscious noodle soups (like the beef-rich pho bo at the original 82nd Avenue noodlehouse, $8), but other sure things include crispy eggrolls ($5) and the otherworldly goi bap chuoi, an abstract-expressionist melange of shredded banana blossoms, chicken, jicama, sesame seeds and chunks of grapefruit ($8).
