With its high-backed banquettes, off-kilter chandeliers, and darkly romantic ambience, the Gilt Club has kicked the class level of Everett Station Lofts up several notches. A menu of American cuisine incorporates seasonal local ingredients, such as the Oregon goat cheese that tops a salad of organic greens. Dungeness crab and green chilies turn the white corn soup into a destination-worthy dish. Pesco-philes will appreciate the seared filet of black cod and roasted halibut, while vegetarians will cream themselves over the creamy grilled-radicchio risotto with bleu cheese, caramelized apples and toasted walnuts. And then there's the trusty hamburger, elevated by a slice of Gruyère cheese, a chili-infused ketchup, and long, thinly sliced french fries that are downright addictive. A specialty cocktail menu offers tasty treats from the bar, which itself is a jewel of curvilinear design. For dessert, you can either finish sweet (vanilla yogurt cream, chocolate cake with candied oranges) or dry (a selection of white cheeses and figs). (RS)
