In case you missed it, former Portland AP reporter Nigel Duara now works for the LA Times, and also freelances for publications such as Deadspin.
For Deadspin, Duara, who formerly wrote a lot about dams, has written a 2,000-word piece about the salmon who are unable to swim upstream and spawn because of those dams.
"Your guests will be amazed at your woodsmanliness. You marched into nature and brought back something and then turned it into something else, and you did it using the simplest tools at your disposal. Sugar, salt, wood, fire. Potato."
It seems like an awful lot of trouble. After reading this, I am even more likely to just buy smoked salmon.
But, I do have one question for Nigel. How does he recommend smoking a dolphin?
