You can tell a lot about a Vietnamese noodle soup spot based on the hour it opens. If it opens at 9 or 10 am, like this spot on the Portland-Beaverton city line, that means it's serving the Vietnamese community, which shows up to eat soup for breakfast. Bowls here tend toward tendon and soft tripe—and there are no bowls with steaky cuts and no offal. The menu is rounded out by rice plates and rolls, including the wrap-it-yourself version for adventurous people, and a sausage roll with a massive amount of meat topped with lots of lettuce and a few overly soft vermicelli noodles. For westsiders, it's a nice option, though the broth lacks the depth of that at Pho Oregon or Pho An Sandy.
