One does not discover Spring Restaurant. Stashed away in the upstairs of H-Mart satellite G-Mart Asian Grocery, it's a place you end up only by word of mouth. But people are almost guaranteed to talk; Spring serves lovely housemade udon as well as the most balanced bowls of sundubu jjigae (spicy soft-tofu stew, $9.95) you'll find in the metro area. The surprising tang of the stew is a fantastic counterpoint to the salty funk of the fish sauce and red pepper paste that bubble away in the molten broth. Missing the egg to crack on top to finish? No worries. They slipped it in right before bringing out the bowl. Don't be shy about asking for refills of the impeccable banchan side dishes (the gogumasun potatoes and eomuk fish cakes are standouts).
